 This monster's name is based on rosemary, a woody, perennial herb with fragrant, evergreen, needle-like leaves and white, pink, purple, or blue flowers, native to the Mediterranean region. Its leaves are used to flavor various foods, such as stuffing and roast meats.

The monster effect "While your LP is higher than your opponent's, if a Plant-Type monster you control attacks, your opponent cannot activate monster effects until the end of the Damage Step." is a Continuous Effect. (It is only applied while your LP are higher than your opponent's.): Aromage Rosemary

The monster effect "Once per turn, if you gain LP: Target 1 face-up monster on the field; change its battle position." a Trigger Effect. (This effect always activates once per turn if you gain LP. It activates even during the Damage Step.)

The effect "change its battle position" targets 1 monster in a Monster Zone. (It can target a monster in either player's Monster Zone.)

When the effect "change its battle position" is activated, if "Aromage Rosemary" is the only monster on the field, it targets itself.

Even if "Book of Moon" is activated in Chain to the activation of the effect of "Aromage Rosemary" that changes battle positions, so that the targeted monster is flipped to face-down Defense Position by the time the effect resolves, the effect is applied normally. The targeted monster is changed from face-down Defense Position to face-up Attack Position.: If Book of Moon is activated in Chain to the activation of the effect of "Aromage Rosemary" that changes battle positions, so that the targeted monster is flipped to face-down Defense Position by the time the effect resolves, how does this resolve?
